Vegan Pesto

1 cup pine nuts
1/3 cup olive oil
1/3 cup nutritional yeast
1 1/2 cups fresh basil
3/4 teaspoon salt
1/2 teaspoon black pepper
3-5 garlic cloves

Combine all but garlic cloves in food processor
Add cloves last, tasting as you add them to determine how many you want



* I made this yesterday - to go on the Garden Sandwich - and it turned out very well! The nutritional yeast was a perfect replacement for cheese. I added more basil, and a little too much oil (my food processor is so tiny that I have to do everything in half batches, so the liquid amounts can be a little troubling when they're something like 1/3 c.), but it still turned out wonderfully!
