Many of these too-hot-to-cook evenings, I like to make what I call "garbage salad"––basically, a big salad with all sorts of stuff I find hanging out in my fridge. Usually, it's just romaine and cheese, plus whatever veggies I have on hand. I add some sun-dried tomatoes, and, since I'm still phasing out meat (i.e., eating up the meat I already had in my cupboards when I decided to go veg) a can of tuna or a salmon patty.
One of the awesome things I've been adding, though, is a cut-up apple. Since I don't usually buy organic fruit and veggies (can't afford it), I peel the apple to avoid the waxy skin, then chop it into chunks. It tastes great with all sorts of salads, and is a nice way to get an extra fruit in. Of course, I've always been a sucker for the sweet and savory combo (not sure if salad's considered savory, actually). Anyway. It tastes good. You should try it!
