Half-assed "Stir-Fry"

So, I don't own a wok. And I hate standing over a hot stove in the summer. Enter the half-assed "stir-fry":

1. Cook some brown rice in your rice cooker or on the stove.

2. Stick a package of frozen spinach and a couple big handfuls of frozen veggies in a microwave-safe dish. Add a couple tablespoons of water (if you feel like it). Cover and microwave on high until veggies are warmed through, stirring a few times (if you feel like it). I often don't.

3. If desired, pan-fry a package of extra-firm tofu, cut into cubes. I can't stress enough how optional this step is. If you'd just rather go do other things while dinner's cooking, skip it. Your half-assed stir-fry will be just as good.

4. Once everything's cooked separately, dump it all together into a big pot. Add enough soy, teriyaki, or other kind of sauce to make it nice and tasty. Mix mix mix. Chomp chomp chomp. Mmmm...

I put teriyaki sauce in mine this evening, and I topped off tonight's dinner portion with a dollop of Yumm! Sauce, since it's like liquid crack and seriously goes well on everything.

This isn't even close to food you'd serve to company, and maybe not even to friends, but it's damn tasty and dead simple, which makes it a particular favorite of mine.
