Scarborough Fair Soup

Simple, cheap, and satisfying... though maybe not as 'quick' as the rest of the recipes under this label.

olive oil
garlic
onion
baby potatoes
carrots
soy creamer
parsley
sage
rosemary
thyme

optional ingredients:
leeks
vegetable broth
spinach

Saute minced garlic and diced onion (and sliced leeks if you have them) until soft.
Add water (or vegetable broth), diced potatoes, and sliced carrots.
Bring to a boil.
Cover and simmer for 20 minutes.
Add creamer as desired.
(add spinach shreds if you have them)
Serve with salt and pepper.
