
1/2 c. plain soy milk
1/2 c. water
1/4 c. melted vegan butter
1 T. sugar
1 t. vanilla
2 T. maple syrup
1 c. spelt flour
1/4 t. salt
Blend all ingredients in mixing bowl.
Chill for 2 hours or overnight.
To cook:
Heat skillet to medium high, pour batter in center, and swirl so batter covers the entire bottom of the skillet.
Cook until golden brown and flip.
*You will need to add soy milk after it chills. It needs to spread easily when poured in the pan, but not so watery that it doesn't stick or cook.
These are SO GOOD with spelt flour!
