otherwise known as, It's Summer and I Want Something Cool and Fresh or I'm Depressed and Don't Feel Like Cooking for the Next Few Days
2 c. orzo
1 small red onion (soak cut onion in cold water for 10 minutes to reduce the sharp taste)
5 tomatoes
3 cucumbers
1 can artichoke hearts
2 orange bell peppers
1 c. fresh basil
3/4 c. chopped, pitted kalamata olives
1/3 c. capers
3/4 c. pinenuts
salt and pepper
vinaigrette:
1 T. Dijon
1 t. sugar
1 T. balsamic vinegar
3/4 c. olive oil
4 cloves garlic, minced
(this balsamic vinaigrette works well also)
Cook orzo, drain, cool
Toss all
Whisk vinaigrette, pour over salad, toss, chill, serve.
