1 package spinach fettuccine
3 handfuls cherry tomatoes
2 bell peppers
2 zucchini
8 baby red potatoes
2 large portobello mushrooms
1 c. fresh basil
3 cloves garlic
1/4 red onion
olive oil
balsamic vinegar
oregano
thyme
nutmeg (just a little bit)
1 lime
Steam potatoes.
Saute chopped red onion and minced garlic for 2 minutes, then add zucchini and 1/4 c. water.
Saute zucchini for 5 minutes.
Add potatoes and saute for 4 minutes.
Add chopped mushrooms, vinegar, and spices, and lower heat.
Cook fettuccine.
While pasta is cooking, add bell peppers to vegetables and saute continuously.
When pasta is done, add halved tomatoes and more spices to vegetables.
Remove from heat, and serve vegetables over pasta.
Top with basil and lime juice.
Okay, the mushrooms? SO GOOD. Seriously. EAT THEM. EAT THEM!
This sounds so good! I might have to make this for dinner sometime in the next week or two... though I did set a "no shopping until I eat some of the canned soup crowding my cupboard" rule a day or two ago. Chelsea! Why must you tempt me with delicious foodstuffs???
